Hello everyone. We hope you and your loved ones are staying safe, healthy and positive in these difficult times. We’re looking forward to brighter days ahead when we can welcome you back to the beautiful Idaho Rockies. As of now, our plan is still to open for guests on June 12. We will, of course, take every precaution to keep you safe as you enjoy the remote, tranquil and wide open spaces at the Ranch. This includes following all CDC, federal, state and local guidelines and social distancing protocols, increased cleaning and sanitation efforts, training of all team members, and daily screening.


In the meantime, we thought we’d share one of our favorite brunch recipes from the Ranch kitchen: JG Lemon-Buttermilk pancakes. They pair perfectly with our famous smoothie, good for breakfast, lunch, virtual hangouts or anytime…so we’re including that one too!

JG (Jean George) Lemon-Buttermilk Pancakes – Must Be Made the Day Of Use

Yield: 6 Orders

 
Set 1:

4 Eggs

1 ¼ C Sugar – Granulated

Set 2:

2ea Lemons – Zested

2 ¼ C. Buttermilk

½ C. Smooth Ricotta Cheese

Set 3:

2 ½ C. Flour

1 tbsp. Baking Powder

1 tbsp. Baking Soda

Method:

Whip Set 1 on high speed for 6 minutes, until peaks start to form. Then add Set 2 and mix on medium speed. Sift Set 3 and fold in by hand. Cook on Griddle at 325-Degree. 

Smoothie

Yield: 4 Portions

1C. Orange Juice

3C. Spinach

1ea Green Apples

2 tbsp. Flack Seed

2 tbsp. Apple Juice

2.5C Greek Yogurt

Method:

Combine all ingredients in a Vitamix Blender – Incrementally, increase the speed, leaving it on high speed for 45 seconds. Serve and enjoy!
