Head Chef Andrew Machanic, a 1993 graduate of the
New England Culinary Institute in Montpelier, Vermont, joined the Idaho Rocky Mountain Ranch
family in 2006, and has been delighting guests with his creative menus,
dishes with local fresh ingredients and artful presentations. Savoring Andrew's food in
the historic lodge dining room with its large central fireplace, original
light fixtures, and mountain vistas is a relaxing and congenial experience.
Dining room seating provides intimate tables for 2 or larger tables where you have the opportunity to enjoy the camaraderie of other guests. There are local musicians at the ranch for your entertainment 3 to 4 nights a week during the dinner hour. Three nights a week, the dinner event is outdoors - a special Dutch Oven Cook-Out, Thursday Barbeque Night and Saturday Idaho night.. Our kitchen was fully updated and remodeled for the 2006 guest season, where Chef Andrew is busy cooking up his “ranch fusion” cuisine.
The menus are innovative and elegant, yet refreshingly down to earth, incorporating fresh, local ingredients and seasonal specialties. Local meats, cheeses, fruits and vegetables intermingle with international and continental flavors to create a one-of-a-kind ranch dining experience. Among the creations are pan-seared Lava Lake Lamb Loin with Honey Anise Glaze, Idaho Ruby and Rainbow Trout Roulade with Wild Sage and Champagne Sabayon, Grilled Marinated Flank Steak with Souffleed Mushroom Crust and Marsala Reduction, Smoke Roasted Duck Breast with Black Currant Sauce, Parmesan Risotto with a Spicy Vegetable Ratatouille and Saffron Wafers.
