Events Chef Andrew, a 1993 graduate of the New England Culinary Institute in Montpelier, Vermont, will fashion menus tailored to your tastes and preferences, from the ultimate picnic or barbecue to more elegant fare. The event menu sampler below illustrates Andrew’s culinary range, and provides a preview of treats that await you. Vegetarian and children’s options always are available, and we can accommodate special diets with advance notice. Event Menu Sampler: Pan Roasted Duck Breast with Smoked Duck Sausage and Green Peppercorn Sauce; Rabbit Ragout with Wild Idaho Morels served with Crushed Yukon Gold Potatoes with Truffled Parsley Oil; Achiote Marinated Tri Tip Of Beef with Ranchero Sauce served with Chayote Squash Puree; Smoked Roasted Beef Striploin with Tomatillo Bearnaise served with Roasted Garlic Mashed Potatoes; Pan Seared Lava Lake Lamb Loin with Jalapeno Herb Honey Glaze, served with Roasted Corn and Lemon Risotto Cakes; Black Grouper Baked in Banana Leaf with Banana Lotus Seed Vinaigrette; Duo of Trout Roulade with Oyster and Ver jus Sabayon; Pancetta-Wrapped Ahi Tuna with Pimento Butter Sauce served with Fava Bean Succatash Cake. Meadow Site Parties The Meadow Site is available for your wedding, reunion, business or special occasion during our summer season, June through September. For a real western flair, Pioneer Outfitters Percheron horse drawn wagon may be contracted to provide your guests a scenic ride, or for transport from the parking area.
